In the fiscal year 2023, 24 healthy meal promotion members are divided into three groups with the activity theme "Are You Getting Enough Vegetables?" to create colorful dining tables. Nutritional courses were held at the Cultural Center in the city.

Group 1: Japanese-style Colorful Vegetables for New Year

Soft and warm, with a pleasant texture - Shrimp and Turnip Steamed Dish

One of the traditional winter dishes of Kyoto, representing winter, is grated turnip made to resemble snow.
"Kabura" refers to turnip, and in local Kyoto, the Shogoin turnip, which is used in dishes like senmaizuke, is utilized.

The gentle flavor of scallops seeps into the body, with plenty of vegetables, Kozuyu

"Kozuyu" was born in the late Edo period as a local dish from the Aizu region of Fukushima Prefecture, and it is still cherished today as a dish for New Year's and ceremonial occasions.

The texture and spicy aroma are addictive - Chrysanthemum Salad

Celebrate longevity on the Double Ninth Festival in September. It is commonly eaten in Akita. The vibrant colors and fragrance of chrysanthemum flowers add to the decoration.

A vibrant dish perfect for the hospitality of Japanese tradition - Shichifuku Namasu

Kohaku namasu is considered a good luck item that symbolizes the wish for family peace, inspired by the red and white mizuhiki. In shichifuku namasu, seven additional vegetables are used, inspired by the Seven Lucky Gods.

Everyone, both adults and children, loves the delicious chicken Yawata roll.

The local cuisine of Yawata City, Kyoto Prefecture, featuring burdock as the main ingredient, has spread nationwide. In the past, it was made by wrapping burdock with eel or conger eel and grilling it, but now various ingredients are wrapped.

Group 2: Easy Arrangements for Summer Vegetables

Ratatouille is a traditional dish from the Provence region in southern France.

Sauté vegetables such as zucchini, eggplant, and onions in olive oil and garlic, then simmer with the moisture from the tomatoes and vegetables. It is often eaten as a cold appetizer or as a side dish for main courses like meat or fish, but it can also be enjoyed as a main stew. 'Touiller' means to mix.

Note: Gazpacho is a cold soup primarily based on tomatoes, using vegetables such as onions, cucumbers, and bell peppers, blended together with bread, garlic, vinegar, and olive oil, and served well chilled. It originated in the hot summer region of Andalusia, Spain, characterized by a thick soup made rich by the addition of bread. It is one of the representative dishes of Spanish and Portuguese restaurants and home cooking, with a history of over 1200 years.

Group 3: Let's enjoy delicious vegetables from Inagi!

Nora Bōsai

A vegetable of the Brassicaceae family and the Brassica genus, a type of rapeseed such as nanohana. It is mainly cultivated in the Nishitama area of Tokyo and around Hannō City in Saitama Prefecture, and it was already being eaten during the Edo period. It looks similar to nanohana but has no bitterness or peculiar taste.

Broccoli

The season is from December to February (available from mid-October)

How to Choose

The flower buds are dense, tightly closed, and rounded.

Type

  • Broccoli originated from raw cabbage native to the Mediterranean coastal region
  • Stem Broccoli Soft all the way to the long stem with a taste similar to asparagus
  • Purple Broccoli The buds are purple (anthocyanin) and have a sweet taste, and they turn green when boiled.

Storage Method

Cook immediately after buying

  • Boil: Short time, do not soak in cold water too long (steamed boil)
  • Microwave: 1.5 to 2 minutes per 100g

Sweet Potato

Variety

Hokuhoku type (Naruto Kintoki, Beniazuma), moist type (Beni Haruka, Silk Sweet), orange type (Anno sweet potato)

How to Choose

Plump, thick, and vibrant crimson, with a solid weight to it

Storage Method

Wrap in newspaper and store in a cool, dark place at 10°C to 15°C; germination occurs at 18°C. Be careful as the temperature in a cool, dark place may be lower than that of a refrigerator during mid-winter.
